Crunchy candied yam souffle

Yield: 8 servings

Measure Ingredient
2 cans (18-oz. ea.) S&W Candied Yams; undrained
¼ cup Melted butter
4 eaches Eggs; separated
¼ cup Packed brown sugar
½ cup Crushed cornflakes
⅓ cup Chopped pecans
2 tablespoons Melted butter

Beat egg whites in a large bowl until stiff; set aside. Puree candied yams in a food processor or blender; add ¼ cup melted butter and egg yolks and blend well. Pour mixture over egg whites, folding in until combined well. Spoon into a buttered casserole or straight-sided souffle dish. Combine brown sugar, conrflakes, pecans and 2 Tbsp.

melted butter in a small bowl; sprinkle mixture over top. Bake at 350 degrees F. for 45 minutes to 1 hour or until puffed and firm.

Serves 8.
