Creole tomatoes

Yield: 6 servings

Measure Ingredient
6 \N Med.size Creole tomatoes
½ cup Fine dry bread crumbs/flour
½ teaspoon Salt
1 dash Pepper
\N \N Shortening

Cut tomatoes crosswise into ½" thick slices. Dip each slice in combined crumbs, salt and pepper. Fry in small amt. of shortening until brown on both sides.

Variation: Dip in cornmeal instead of crumbs or flour.
