Creole kidney beans

Yield: 6 Servings

Measure Ingredient
4 slices Bacon; diced
1 cup Onion; chopped
¼ cup Green pepper; diced
1 tablespoon Sugar
½ teaspoon Salt
½ teaspoon Pepper
1 cup Canned tomatoes
2 cans Kidney beans; 1 Lb. each

Place bacon in a 1½ quart casserole. Cover with a paper towel. Microwave at high (100%) until brown, 3 ½ to 4 minutes. Drain all but 1 tablespoon bacon fat. Add onion and pepper. Cover. Microwave at high (100%) until onion is tender, 3 to 4 minutes.

Add remaining ingredients Microwave at medium high (70%) until heated through, 8 to 10 minutes. Makes 6 servings.
