Cracker 'n vegetable lasagna

Yield: 6 Servings

Measure Ingredient
1 medium Red Bell Pepper; cut in strips
1 small Onion; sliced
1 small Zucchini; sliced
½ teaspoon Oregano Leaves
1 tablespoon Fleischman's Margarine
32 \N Premium Saltine Crackers; any kind
4 ounces Reduced Fat Cheddar Cheese; shredded
2 cups Skim Milk
1 cup Egg BeatersĀ® 99% Egg Substitute

In large skillet, over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese. Repeat layers, ending with cheese.

In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at 350° for 30 to 35 minutes or until knife inserted in center comes out clean.
