Crab stock

Yield: 1 Servings

Measure Ingredient
2 pounds Gumbo crabs; shelled, rinsed and concasser (chopped)
½ pounds Onions; rough chop
½ pounds Leeks; rough chop
½ pounds Celery; rough chop
4 \N Bay leaves
1 teaspoon Whole dried thyme
½ tablespoon White peppercorns; whole
1 \N Head garlic; cut in half
4 quarts Very cold water

1. Place all ingredients in stock pot.

2. Bring to a boil, reduce heat and simmer for 45 minutes.

3. Skim carefully.

4. Remove from heat and strain. Note: Do not allow stock to boil rapidly, it will cloud.
