Measure | Ingredient |
---|---|
2 pounds | Gumbo crabs; shelled, rinsed and concasser (chopped) |
½ pounds | Onions; rough chop |
½ pounds | Leeks; rough chop |
½ pounds | Celery; rough chop |
4 \N | Bay leaves |
1 teaspoon | Whole dried thyme |
½ tablespoon | White peppercorns; whole |
1 \N | Head garlic; cut in half |
4 quarts | Very cold water |
1. Place all ingredients in stock pot.
2. Bring to a boil, reduce heat and simmer for 45 minutes.
3. Skim carefully.
4. Remove from heat and strain. Note: Do not allow stock to boil rapidly, it will cloud.
