1 tablespoon | Olive oil |
1 cup | Sliced red onion |
2 \N | Garlic cloves, minced |
1 cup | Green and yellow bell pepper strips |
2 cups | Sliced mushrooms |
1 tablespoon | Chopped fresh basil OR |
2 teaspoons | Dried basil, crushed |
1¾ cup | Contadina Stewed Tomatoes, undrained (14.5 oz can) |
⅓ cup | Contadina Tomato Paste (half of a 6 oz can) |
½ cup | Chicken broth |
½ teaspoon | Salt (opt) |
In large skillet, heat oil; saute onion and garlic for 1-2 minutes.
Stir in bell peppers, mushrooms, salt and basil; saute for 2 minutes.
Stir in Contadina Stewed Tomatoes and juice, tomato paste and broth; bring to a boil and simmer for 5 minutes. Serve sauce with broiled or grilled chicken over cooked fettuccine.
