|1 cup||Uncooked regular rice|
|1 cup||Chopped onion|
|½ cup||Butter; melted|
|½ cup||Seedless raisins|
|1 can||Sliced mushrooms; drained (4 oz.)|
|2 cans||Consomm‚; (10 1/2 oz. each)|
|½ cup||Chopped peanuts|
|½ cup||Chopped celery|
Lightly brown rice and onion in butter.
Combine rice mixture, raisins, mushrooms, consomm, peanuts, and celery; mix well.
Pour into a 2 quart casserole.
Bake uncovered at 350 degrees for 50 to 60 minutes or until rice is done.
Yield: 8 - 10 servings.
