⅓ cup Margarine (softened)
1 cup Sugar
1 each Egg
1 teaspoon Coconut extract
1 cup Bisquick
1 cup Instant potato flakes

Cream margarine, sugar until fluffy. Add egg & extract. Stir until creamy. Stir in flakes & bisquick. Roll in ¾" balls. Bake at 350* 8-10 minutes on ungreased cookie sheet.
