Cocoa centers

Yield: 1 Servings

Measure Ingredient
1½ cup Boiling water
3 cups Sugar
⅔ cup Cocoa (up to 3/4)
⅛ teaspoon Cream of tartar
6 tablespoons Powdered milk
1 teaspoon Vanilla

Melt butter. Add boiling water. Mix sugar, cocoa, and cream of tartar together, and stir into hot liquid. Keep stirring until mixture boils.

Cover

and cook for about 3 minutes (to allow steam to wash down crystals).

Uncover, reduce heat, and cook slowly without stirring to 236F (soft ball stage). Remove from heat. Cool to 110F (lukewarm). Add powdered milk and vanilla. Beat until smooth and creamy. Pour into buttered pan and flattened out. Cut into small cubes or shape into small balls. When centers are at room temperature, cover with chocolate coating.
