Classic tomato salsa

Yield: 1 Servings

Measure Ingredient
1 small Onion; chopped
1 \N Clove garlic; minced
3 cups Peeled chopped tomatoes
1 \N Jalapeno pepper; minced
1 \N Lime
¼ cup Cilantro or parsley; chopped
½ teaspoon Salt

In a small bowl, combine onion and garlic. Pour enough boiling water over to cover. Let stand 2 minutes and drain. Add tomatoes, pepper, 1 tablespoon lime juice and cilantro or parsley.

NOTES : Makes about 4 cups. Fresh salsa does not keep well, no more than one

day in the refrigerator. This is a good quantity for a large party - you may

want to cut it in half for a smaller gathering.
