|¼ cup||Fresh lime juice|
|3 cups||Cooked long-grain white rice|
|¾ cup||Each green/red bell peppers|
|⅓ cup||Green onions -- thinly|
|¼ cup||Fresh cilantro -- minced|
1. Whisk the oil, lime juice, salt and pepper in a bowl until well blended. 2. Add remaining ingredients. Toss to coat with dressing.
Makes 5 cups or 8 servings.
