1 pounds | Boneless Skinless Chicken Breast Halves |
2 larges | Garlic Clove |
3 tablespoons | Extra Virgin Olive Oil |
2 tablespoons | Fresh Cilantro; Chopped |
1 teaspoon | Ground Cumin |
Light a medium-hot fire or preheat the broiler. Cut the chicken breasts lengthwise into ¾" wide strips. Thread the chicken strips onto 12 metal or soaked bamboo skewers. Mince the garlic. In a small bowl, combine the garlic, oil, cilantro and cumin. Brush some of the garlic oil over the chicken strips. Grill or broil 3 to 4" from the heat for 4 minutes. Baste the chicken with any remaining marinade, turn the skewers over and cook until the chicken is nicely browned on the outside and white to the center, 3 to 4 minutes longer.
