| Measure | Ingredient |

| ¼ cup | Lemon juice |
| 2 tablespoons | Lemon rind; chopped |
| 5 | Fresh figs; diced (or dried & soaked overnight) |
| 2 | Papayas; diced -OR- |
| 4 cups | Mexican papaya or honeydew |
| ¼ cup | Onion; finely diced |
| 1 cup | Green pepper or green cabbage; diced |
| 2 mediums | Bananas; thinly sliced |
Pour lemon juice over figs and papayas and let sit 1 hour. Mix in remaining ingredients and pack tightly into a casserole dish. Bake in a 350 degree F oven for 20 minutes or microwave for 5 minutes.
Chill before serving.
