|2 tablespoons||Lemon rind; chopped|
|5||Fresh figs; diced (or dried & soaked overnight)|
|2||Papayas; diced -OR-|
|4 cups||Mexican papaya or honeydew|
|¼ cup||Onion; finely diced|
|1 cup||Green pepper or green cabbage; diced|
|2 mediums||Bananas; thinly sliced|
Pour lemon juice over figs and papayas and let sit 1 hour. Mix in remaining ingredients and pack tightly into a casserole dish. Bake in a 350 degree F oven for 20 minutes or microwave for 5 minutes.
Chill before serving.
