¼ pounds | Butter |
1 cup | Celery -- chopped |
½ cup | Bell pepper -- chopped |
⅓ cup | White onion -- chopped |
1 pounds | Crawfish -- chop coarse |
1 teaspoon | Salt |
2 teaspoons | Prudhomme's Seafood Magic -- |

1 can | Water chestnuts -- sliced |
1 cup | Water |
Melt butter and saute celery, bell pepper and onion until limp. Add the crawfish tails, sprinkle with salt and Seafood Magic. Saute for 5 minutes.
Add the stuffing, water chestnuts, green onion and water. Mix well. Spoon into a buttered dish or turkey cavity. Bake uncovered at 350~ for 25 minutes. Yields 6 cups
