Chocolate mint chip brownies

Yield: 4 Servings

Measure Ingredient
⅔ cup Sugar
¼ cup Packed fresh mint leaves or
1½ tablespoon Dried mint
½ cup Unsalted butter
4 ounces Semisweet chocolate coarsely
\N \N Chopped
2 larges Eggs lightly beaten
1 teaspoon Vanilla
⅔ cup Flour
¼ teaspoon Salt
1 cup Mint chocolate chips

Grease and flour an 8x8 inch pan and preheat the oven to 325. Combine the sugar and mint in the bowl of a food processor until the mint is pulverized Set aside. Melt the butter in a 2 quart saucepan over very low heat. Turn off the heat and add the chocolate. Set aside for 5 minutes to melt. Whisk the chocolate to smooth then stir in the mint sugar. Whisk in the eggs and vanilla. Mix together the flour and salt then stir into the chocolate mixture until evenly blended. Fold in the mint chocolate chips. Scrape the batter into the prepared pan and bake for 35 minutes. When done the surface will be soft. Cool overnight on a rack before slicing.
