Chocolate kissed strawberries

Yield: 1 Servings

Measure Ingredient
1 pint Strawberries; washed and patted dry
1 ounce Semi sweet chocolate
1½ tablespoon Butter
1 tablespoon Corn syrup
1 tablespoon Rum; (optional)

1. In a double boiler over hot, not boiling water, combine chocolate, butter, corn syrup and rum.

2. Heat until chocolate is melted, stirring mixture until smooth. Remove from heat.

3. Dip each berry into the chocolate, coating about ⅔ of it. Hold above the bowl to allow excess chocolate to drip off.

4. Place the berry on waxed paper to harden. When cooled, refrigerate for about 20 minutes.

Make Ahead: You may make these a day or two ahead, store in a covered container in the refrigerator but they taste best if served within a few hours of coating.

Something special? Want to add a little more pizzaz to plain strawberries? Grab a syringe or flavor injector, fill it with Grand Marnier and inject a small amount of the delicious liqueur into the center of the fruit.

Something spectacular! Twice dip the strawberries! Melt 1 oz. of white chocolate. After dipping the berry in semi-sweet chocolate (coating about ⅔ of the berry), let it set, then dip the same berry in melted white chocolate, coating about ⅓ of the berry. For the best visual effect, you want to leave some of the semisweet chocolate visible.

Feed them to your lover in whatever style suits your mood. Select berries with a strong red color, green hulls and a fragrant strawberry scent. Avoid blemished berries or scentless ones.
