Chili con carne for a crowd

Yield: 50 servings

Measure Ingredient
¼ cup Shortening or vegetable oil
3 cups Chopped onions
6 eaches Garlic cloves, mashed
8 pounds Ground beef
¼ cup Chili powder or more to taste
1 tablespoon Salt
½ teaspoon Red pepper
1 teaspoon Black pepper
2 eaches 48oz cans tomato soup or tomatoes
7 quarts Red kidney beans (14 19oz cans) drained and rinsed

SERVES 50

Brown the beef, garlic and onions until done. Add seasonings, soup and beans. cook slowly for about 30-60 minutes, stirring occasionally. VARIATION: For deluxe chili, provide bowls of grated cheese, chopped onions, tomato and sour cream as toppings for individual servings. Origin: Homestyle, Canadian Classics.
