Chicken braised with bacon & potatoes^

Yield: 2 servings

Measure Ingredient
2 larges Red potatoes, cut in 3/4\"
\N \N Dice
2 slices Low salt bacon, cut in 1/2\"
\N \N Pieces
4 \N Skinned, boned chicken
\N \N Thighs
1 cup Frozen pearl onions, thawed
\N \N And drained
⅓ cup Low salt chicken broth
½ teaspoon Thyme
\N \N Chopped parsley

Boil potatoes 4 minutes; drain. Crisp bacon. Transfer bacon to paper towels. Fry chicken, seasoned with peppre, in bacon fat until brown. Turn heat to low; add potatoes, onions, broth and thyme. Cover and simmer until potatoes are tender and chicken is done, about 18 minutes. Remove cover, sprinkle with bacon and cook until sauce is slightly thickened.

Garnish with parsley.
