Chicken booyah

Yield: 4 servings

Measure Ingredient
5 pounds Stewing chicken
2½ cup Onions
1½ pounds Beef stew meat
3 cups Celery
¼ pounds Lean pork
½ \N Lemon, cut in pieces
½ pounds Dried navy beans, soaked
8 cups Potatoes
½ pounds Split green peas
4 cups Shredded cabbage
2 cups Canned whole tomatoes
4 tablespoons Butter
4 cups Carrots

salt and pepper to taste

Cover meat with cold water and slowly bring to boil. Skim and simmer for 1 hour. Add beans, peas, tomatoes, carrots, onions, celery and lemon. Cook 3 hours. Add remaining ingredients and simmer 30 minutes. Makes about 4 gallons. Keep adding water during cooking to keep vegetables and meat covered.
