chicken and apricot stir fry

MeasureIngredient
1 teaspoon Peanut or canola oil
1 each Garlic clove
2 eaches Chicken breast halves
3 eaches Apricots
1 tablespoon Scallion, chopped
3 tablespoons Orange juice
1 tablespoon Soy sauce
2 teaspoons Cornstarch
¼ teaspoon Grated gingerroot

Cube boned, skinned chicken breast. Pit and slice apricots. Saute garlic in oil, add chicken, stir fry. Add ginger, stir fry. Add apricots, and scallions. Stir fry. Combine orange juice, soy sauce, and cornstarch. Stir to coat.
