|1½ pounds||Ground beef|
|½ cup||Fine, dry breadcrumbs; divided|
|1 each||Egg; beaten|
|2 tablespoons||Commercial barbecue sauce|
|1 cup||(4 oz) sharp Cheddar cheese; shredded|
|¼ cup||Green pepper; chopped|
Combine beef, ¼ cup breadcrumbs, egg, barbecue sauce, and salt, mixing well; shape into a 14" x 8" rectangle on a sheet of waxed paper. Combine remaining ¼ cup breadcrumbs, cheese, green pepper, and water, mixing well; press gently into meat mixture, leaving a ½" margin around edges.
Beginning at short end, roll up meat jellyroll fashion, lifting waxed paper to help in rolling. Press edges and ends together to seal. Cover and chill 1 hour.
Cut roll into 6 slices. Arrange slices on rack of a lightly greased broiler pan. Bake at 350 degrees F for 30 minutes or until desired degree of doneness. Yield: 6 servings.
