Cheddar-onion muffins

Yield: 12 muffins

Measure Ingredient
2 cups Flour
1 tablespoon Baking powder
1 teaspoon Salt
½ teaspoon Paprika
2 tablespoons Sugar
1 \N Egg, beaten
½ cup Milk
½ cup Sour cream
⅓ cup Butter, melted
1 cup Cheddar cheese, grated
½ cup Finely chopped onion
¼ cup Fresh parsley, finely chopped

Preheat the oven to 400 degrees F.

Sift together the first 5 ingredients. Add the remaining ingredients except for the onions and parsley. Mix just until blended. Fold in the onion and parsley. Fill paper lined muffin tins full and bake about 20 minutes. Best served hot or warm while the cheese is still gooey.
