Measure | Ingredient |

8 \N | Carrots, peeled (up to 10) |
1 cup | Raisins, or more to taste |
½ cup | Orange juice |
\N \N | Splash of balsamic vinegar, or more to taste |
1 can | Cubed pineapple, with some juice |
½ cup | Shredded apple (optional) (up to 3/4) |
Using food processor if handy, grate carrots. Mix with all other ingredients, including food processed apple if desired, and chill. Very refreshing and healthy. I have seen this made with fat-free mayo but not really necessary since the orange juice/vinegar acts as a great dressing.
