Carmel apple cookies

Yield: 3 servings

Measure Ingredient
½ cup Shortening
1⅓ cup Brown sugar, firmly packed
1 \N Egg
2¼ cup Sifted flour
1 teaspoon Baking soda
½ teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Ground cloves
½ teaspoon Nutmeg
2 cups Grated peeled apples
2 cups Light raisins
½ cup Apple juice
2 cups Chopped walnuts
\N \N Carmel icing

Cream shortening, sugar and egg. Sift dry ingredients together and add to creamed mixture. Stir in remaining ingredients, except icing.

Drop 3 inches apart on a greased cookie sheet. Bake at 350 degrees for about 12 minutes. Cool, spread with icing.

Carmel Icing ¼ c butter ¼ c brown sugar, packed 1½ c powdered sugar ¼ ts salt

2 ½ tb light cream

Mix butter and brown sugar in a saucepan and cook until sugar is dissolved. Add sifted powdered sugar, salt and cream. Beat until smooth. If too thick, add a little more cream. Randy Rigg Submitted By RANDY RIGG On 06-14-95
