Caramel icing #1

Yield: 1 Servings

Measure Ingredient
2½ cup Sugar
1 \N Egg; slightly beaten
1 \N Stick butter
¾ cup Evaporated milk
1 teaspoon Vanilla

Heat milk and 2 cups sugar with butter. Cool slightly and add beaten egg.

Melt ½ cup sugar in iron skillet slowly until brown and runny. Turn heat to medium on first mixture; add browned sugar and cook 10 minutes. Remove from heat; cool slightly and add vanilla. Beat to desired consistency for spreading over cake, adding a bit of cream if mixture becomes too thick.
