Calzones

Yield: 6 servings

Measure Ingredient
2 tablespoons Olive oil
1 cup Water -- plus 2 tbsp
½ teaspoon Sugar
15 ounces Ricotta cheese
½ cup Mozzarella cheese -- grated
¼ cup Parmesan cheese -- grated
1 teaspoon Salt
3 cups Bread flour
1½ teaspoon Yeast
8 ounces Italian sausage
1 tablespoon Oil

FILLING

In heavy skillet cook sausages in 1 tbsp oil. Cool to room temperature and slice into ¼" pieces. All all dough ingredients and program for knead and first rise. When done remove and press down. Let rest for 5 minutes. Prepare fillings and set aside.

Preheat oven to 400. On lightly floured work surface, roll dough into 6" long cylinder. Cut dough into 6 equal pieces. Lightly sprinkle balls of dough with flour. Roll out each ball of dough into a ¼" thick circle. Place ⅙ of the cheese filling in the center of each circle. Place ⅙ of the sausage slices on top of the cheese. With your fingertip, wet the inside circle with water. Fold the dough over to make a half-moon and seal. Fold the edge up and crimp so that the calzone is well sealed. Place on lightly oiled baking sheets. Bake for 25 minutes or until golden brown. Serve hot.
