Date: Tue, 25 Jun 1996 09:53:47 EDT In a saucepan over medium-high heat, bring the orange juice and water to a boil. Stir in the couscous and oil. Remove from the heat. Cover, let stand for 30 minutes. In a large bowl, toss the couscous with the oranges, kiwi fruit, lime juice, mint and pine nuts. Serve immediately or chill until ready to serve. Servings: 4
Per serving: 237 calories, 6⅘ g fat, (24% of calories), 0 mg cholesterol, 9 mg sodium, 7 g dietary fiber. NOTE: I prefer this well chilled. If I don't have pine nuts, I substitute walnuts or pecans.
