Cajun hushpuppies

Yield: 6 servings

Measure Ingredient
1½ cup Cornmeal
½ cup Flour
1 tablespoon Baking powder
3 tablespoons Cajun seasoning
1 each Onion, finely grated
2 eaches Garlic, minced
2 eaches Eggs, beaten
1 cup Milk
2 tablespoons Butter
1 each Oil, vegetable for frying

Combine cornmeal, flour, baking powder and Cajun seasoning.

Blend in garlic and onion. Beat eggs with fork, than add beaten eggs to cornmeal mixture. Heat milk and butter until butter melts. Remove from heat and add to corn meal mixture, blend well. Refrigerate for 1 hour.

Heat oil in deep fryer of heavy saucepan. You will need at least 4 inches of oil. Heat to 350. Carefully drop hushpuppy batter by tablespoonsful into the hot oil a few tablespoons at a time. Cook hushpuppies until golden brown on both sides. This will take about 2 mins. Drain on paper towels.
