|1 pack||Frozen puff pastry; thawed|
|2 tablespoons||Cornmeal; plus cornmeal for baking sheets|
|½ pounds||Hot smoked link sausage; sliced|
|1 can||(small) sliced jalapenos; drained|
Roll 1 pastry sheet into a 15 x 12 inch rectangle on a surface lightly sprinkled with cornmeal. Cut into 3 inch squares. Cut sausage into ¼ inch slices, and cut each slice in half, crosswise. Place 1 piece of sausage and 1 jalapeno slice in center of each square. Fold corners to center, slightly overlapping edges.
Place filled pastries, seam side down, on greased baking sheets sprinkled with cornmeal. Repeat procedure with remaining pastry, sausage, and jalapeno peppers. Bake in a preheated 400 degree oven for 12-15 minutes.
Yield: 40 appetizer servings.
