Measure Ingredient
5 fluid ounce Low-fat natural yogurt
\N \N Salt and Pepper
1 \N Garlic clove, peeled and crushed
\N \N 2 inch length cucumber, peeled and chopped
1 tablespoon Freshly chopped mint
1 tablespoon Freshly chopped parsley
\N \N Extra chopped mint, to garnish

Drain off any liquid from the yogurt, place in a bowl and whisk until smooth.

Add the remaining ingredients, except garnish, and mix well. Turn into a serving bowl and chill for 30 minutes. Sprinkle with extrac chopped mint to serve.
