Measure | Ingredient |

5 fluid ounce | Low-fat natural yogurt |

1 \N | Garlic clove, peeled and crushed |
\N \N | 2 inch length cucumber, peeled and chopped |
1 tablespoon | Freshly chopped mint |
1 tablespoon | Freshly chopped parsley |
\N \N | Extra chopped mint, to garnish |
Drain off any liquid from the yogurt, place in a bowl and whisk until smooth.
Add the remaining ingredients, except garnish, and mix well. Turn into a serving bowl and chill for 30 minutes. Sprinkle with extrac chopped mint to serve.
