Measure | Ingredient |

½ cup | Lean ham; cubed |
1 cup | Lowfat chicken broth |
1 large | Onion; chopped |
3 \N | Stalks celery; chopped |
2 larges | Carrots; chopped |
8 cups | Vegetable broth |
¼ teaspoon | Cumin; more to taste |
¼ teaspoon | Coriander; more to taste |
½ teaspoon | Hot pepper sauce; more to taste |
½ cup | Vegetable juice cocktail |
¼ cup | Lime juice; or lemon juice |
⅓ cup | Wild rice |
⅔ cup | Long-grain brown rice |
saute the veggies in the cup chicken broth til soft in a pressure cooker.
Toss all remaining ingredients in the pot stir lock lid in place bring up to high pressure level out and cook for 12 min. Release pressure an let sit closed for 5 min.. Enjoy
