Broiled salmon with spicy maple basting sauce

Yield: 4 servings

Measure Ingredient
6 tablespoons Maple syrup (Grade B) or
\N \N Grade A maple syrup flavored with
3 \N Drops maple extract
½ cup Water
2 tablespoons Ginger; peeled and minced
2 \N Garlic clove(s), minced
1 teaspoon Dried hot red pepper flakes or to taste
¼ teaspoon Salt
4 \N 1\" thick salmon fillets (6 oz ea)

In small heavy saucepan combine maple syrup, water, ginger, garlic, red pepper flakes, and salt and simmer until reduced to about « cup.

Cool basting sauce.

Preheat broiler.

Arrange salmon, skin side down, on oiled rack of broiler pan and season with salt. Brush with sauce and broil until just cooked through, about 6 minutes more.
