Broccoli-tofu stir-fry

Measure Ingredient
1 tablespoon Sesame oil (PLUS 1 tsp)
1 small Onion, sliced
12 ounces Firm tofu, drained, 1/2-inch cubes
¼ cup Low-sodium soy sauce
2 tablespoons Rice vinegar
1 tablespoon Fresh ginger, grated
2 cups Broccoli flowerets
1 medium Red bell pepper, thin strips
1½ cup Mushrooms, sliced

INGREDIENTS

DIRECTIONS

Heat oil in a 12-inch skillet and stir-fry onion until slightly tender. Add tofu and stir-fry until lightly browned. Add the remaining ingredients. Gently toss to coat all the ingredients with the sauce. Cover and simmer over medium heat 5 minutes until the vegetables are tender.
