|½ cup||Maui onion; chopped|
|½ cup||Celery; chopped|
|2 cups||Cooked rice|
|2 cups||Chicken broth|
|8½ ounce||Crushed pineapple; drained|
In a medium-sized skillet, cook and stir onion and celery in butter until onion is tender. Stir in chicken broth and rice. Heat to boiling.
Cover. Remove from heat. After 10 minutes, uncover, and stir in pineapple. Use as a stuffing for Cornish game hens or chicken.
