| 1 pounds | Dried Navy beans; (2 cups) |
| 2 teaspoons | Sugar |
| 1 teaspoon | Salt |
| 1 dash | Pepper |
| 7 cups | Cold water |
| ¼ pounds | Salt pork |
Pick over and wash beans thoroughly in cold water. Place beans in a 3 or 4-quart saucepan, add remaining ingredients, cover and SIMMER for 2½ to 3 hours until beans are tender but not mushy. Shake the pan occasionally to prevent sticking. Edible cow peas and soy beans may be cooked in the same manner. Makes about 6 cups.
These beans are delicious eaten as is, or may be used for making soup or salad.
