Black walnut carrot cake w/buttermilk gl

Yield: 16 Servings

Measure Ingredient
3 cups Grated carrots
4 \N Eggs
1½ cup Oil
2 cups Sugar
2 cups Sifted flour
1 cup Chopped black walnuts
1 teaspoon Vanilla
¼ teaspoon Black walnut extract
1 teaspoon Cinnamon
½ cup Buttermilk
1 cup Sifted powdered sugar
½ teaspoon Baking soda
1 tablespoon White corn syrup

Mix all ingredients together. Bake 90 minutes. Remove from oven and, while cake is still hot, glaze with Buttermilk Glaze.

Buttermilk Glaze: Blend all ingredients well. Pour on top of hot cake. Let stand for 1 hour. Remove cake from pan and serve.
