beef congee

6 servings
1 cup Rice -- wash well & drain
3 quarts Water
2 cups Beef Broth
1 tablespoon Soy Sauce
1 teaspoon Sugar
Scallion -- chopped
2 cups Beef -- shredded
½ teaspoon Sesame Oil
  Salt And Pepper


1. Marinate the beef shreds in the soy sauce.

2. Bring the rice and water to a boil in a large saucepan. Cover and simmer for 1½ hrs without stirring.

3. Add the two cups of broth and sugar, bringing it to a boil. Stir in the beef and when the rice again boils turn down the heat.

4. Simmer for 15 mins more. Stir in the chopped scallions, sesame oil, salt and pepper.
