basic water fondant

1 servings
4 cups White sugar
¼ teaspoon Cream of tartar
1½ cup Boiling water
  Few grains of salt

Mix all ingredients together. Put over high heat and stir until well blended. Cook to soft ballstage (230F). Remove and cool. Always let it cool in the pan that it cooks in. When almost cool, pour onto platter and beat till set. Work with hands and add flavoring. Place in tightly covered bowl and store in cool place.
