Basic cream fondant

Yield: 1 servings

Measure Ingredient
4 cups Sugar
2 tablespoons Corn syrup
1½ cup Milk or cream
1 tablespoon Butter
\N \N Few grains salt

Combine sugar, cream, corn syrup, salt and the butter. Place over heat and dissolve all sugar before boiling. Boil until soft ball stage (230F). Place tight lid on and cool as fast as possible. Cool thoroughly until cold to the touch. Take out of pan. Put fondant on platter and beat with knife continously. It will be shiny and stiff then become thinner and lose it's gloss.
