2 teaspoons | Low-cal margarine |
2 cups | Thinly sliced mushrooms |
1 cup | Chopped onion |
1 cup | Pearl barley, uncooked |
2½ cup | Hot water |
1½ teaspoon | Beef bouillon |
¼ teaspoon | Salt |
⅛ teaspoon | Pepper |
2 tablespoons | Parsley |
Coat a large nonstick skillet with cooking spray; add margarine.
Place over medium heat until margarine melts. Add mushrooms and onions; saute until tender. Add barley, and saute 4-5 minutes or until barley is lightly browned. Remove from heat. Transfer barley mixture to a 1½ qt baking dish coated with cooking spray. Stir in water, bouillon,salt and pepper. Cover and bake at 350 for 1 hour and 15 minutes or until barley is tender and liquid absorbed, stirring every 15 minutes.
