Bananas and cream bread (for bread machines)

Yield: 1 loaf

Measure Ingredient
2 teaspoons active dry yeast
3 cups bread flour
3 tablespoons wheat germ
3 tablespoons powdered milk
1½ tablespoon sugar
1½ teaspoon salt
¾ teaspoon grated nutmeg
1½ tablespoon vegetable oil
1 cup mashed ripe banana plus
2 tablespoons mashed ripe banana
¾ cup sour cream or plain yogurt
¼ cup water plus
1 tablespoon water
\N \N Raisins or chopped nuts (optional)
1¼ teaspoon active dry yeast
2 cups bread flour
2 tablespoons wheat germ
2 tablespoons powdered milk
1 tablespoon sugar
1 teaspoon salt
½ teaspoon grated nutmeg
1 tablespoon vegetable oil
¾ cup mashed ripe banana
½ cup sour cream or plain yogurt
¼ cup water
½ cup raisins or chopped nuts (optional)

Add all ingredients except the raisins or nuts, if included, in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.

At the beeper (or at the end of the first kneading in the Panasonic or National), add the raisins or nuts.
