banana holiday quickbread

MeasureIngredient
⅓ cup Shortening
⅔ cup Sugar
Eggs
1¾ cup Flour
2¾ teaspoon Baking powder
½ teaspoon Salt
1 cup Mashed bananas; about 3
½ cup Chopped walnuts
1 cup Candied fruit; mixed
¼ cup Raisins

Preheat oven to 350 degrees. Grease a 5"x8"x2" loaf pan. Combine shortening and sugar, beat until light and fluffy. Add eggs and beat well. Sift together dry ingredients. Add to batter alternately with the mashed bananas. Stir in nuts, candied fruit and raisins. Pour batter into prepared pan. Bake for 55-60 mins. or until tests done with a toothpick.
