banana cranberry muffins

⅛ teaspoon Cream Of Tartar
½ cup Sugar Twin
Egg - Second Nature
1½ cup Mashed Bananas
⅓ cup Margarine - Becel Light
¾ cup Cranberries; fresh or frozen

Preheat oven to 375. Combine first 7 ingredients in large bowl. Beat egg, banana and melted margarine together well. Add to dry ingredients, stirring just to moisten. Fold in cranberries. Spoon into 12 medium muffin cups, lightly greased or lined with paper baking cups. Bake for 20 - 25 minutes, or until top springs back when lightly touched.
