banana and raisin muffins

Egg lightly beaten
4 fluid ounce Milk
2 fluid ounce Vegetable oil
3½ ounce Granulated sugar
7 ounces Mashed banana
1 teaspoon Vanilla
5 ounces Wholemeal flour
1 teaspoon Baking soda
1 teaspoon Baking powder
2 ounces Oat bran
4 ounces Raisins

I dont know the fat content of normal muffins - this one is 5gram/muffin, and healthy!

>From - The Light Hearted Cookbook (British Heart Foundation) In bowl, combine egg, milk, oil, sugar, bananas and vanilla. Mix well, In another bowl mix together flour, baking soda, baking powder, oatbran and raisins. Stir into egg mixture taking care not to over mix.

Spoon into muffin tins filling each about ⅔ full. Bake in 400 F (200 C - Gas mark6) for twenty to twenty five minutes.
