Baked fish with bacon stuffing

Yield: 4 Servings

Measure Ingredient
3 cups Soft bread crumbs
1 tablespoon Bacon drippings
¼ cup Onion; finely chopped
¼ cup Diced bacon; cooked
2 tablespoons Lemon juice
2 tablespoons Water
\N \N Seasonings
2 pounds Dressed fish
\N \N Soft butter or margarine
\N \N Lemon wedges

Mix together all ingredients except fish, butter and lemon. Place stuffing lightly in cavity of fish; do not skewer. Place in greased baking pan; spread with butter. Bake in a 400 degree oven for 40 minutes or until fish flakes easily. Baste occasionally. Serve with lemon wedges.
