Baked eggs

Yield: 1 serving

Measure Ingredient
1 cup Matzo farfel;
1 teaspoon Salt;
⅛ teaspoon White pepper;
1¼ cup Tomato sauce w/ mushrooms
4 \N Raw eggs;
\N \N Cheese of your choice; grated (optional)

In a small bowl, combine matzo farfel with salt, pepper and the tomato sauce. Divide the mixture evenly into 4 well-greased 8 or 10 oz baking dishes. Make a well in the center of each dish and drop an egg into each depression. Bake at 350 degrees for 15 to 20 minutes, until the eggs are firm. If desired, sprinkle the top of each egg with grated cheese and bake until the cheese melts. Source: The Complete Passover Cookbook by Frances R.
