baked cheese grits

½ teaspoon Salt
2⅔ cup Water
⅔ cup Hominy grits, quick-cooking
2 tablespoons Butter or margarine
6 ounces American cheese, shredded
Eggs; beaten
⅛ teaspoon Pepper

Preheat oven to 350 F (moderate) Grease a 2-quart baking dish.

Add salt to water. Bring to a full, rolling boil. Add grits; return to boiling point. Cook, stirring constantly, until very thick, about 6 minutes.

Remove from heat. Add fat. Mix cheese, eggs, and pepper. Stir into grits. Pour into baking dish. Bake 40 minutes or until lightly browned.
