1 cup | Dry bread crumbs (plain; whole wheat or Italian) |
¾ cup | Grated Parmesan cheese |
¼ cup | Chopped parsley |
1 teaspoon | Paprika |
½ teaspoon | Oregano |
¼ teaspoon | Basil |
2 teaspoons | Salt |
½ teaspoon | Pepper |
⅓ cup | Butter or margarine; melted |

Clean, wash and pat fish dry. Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted butter and roll in crumb mixture. Arrange fish in a well greased 9x13 baking dish. Bake at 375ø for about 30 minutes or until fish flakes easily when tested with a fork. Garnish with lemon wedges and parsley. Yield: 6 servings.
