Baked catfish a la meuniere

Yield: 6 servings

Measure Ingredient
6 \N Catfish fillets(4-5oz ea)
1 \N Egg
1 tablespoon Water
½ cup Cracker meal
¼ cup Parmesan cheese
1 tablespoon Lemon and herb seasoning
¾ cup Butter or margarine
2 tablespoons Green onions,chopped
3 tablespoons Lemon juice
1 tablespoon Minced parsley
¼ teaspoon Salt
¼ teaspoon White pepper
1 dash Hot pepper sauce
1 dash Worcestershire sauce

MEUNIERE SAUCE

1. Thaw frozen fish according to package directions. 2. Beat egg and water.

3. Combine cracker meal, cheese and seasoning; dip fish fillets in beaten egg, then roll in crumb mixture. 4. Pour Meuniere Sauce in shallow baking dish; place fillets in dish, turning once or twice to coat both sides well. 5. Bake in 350'F. oven 40 minutes, or until fish flakes easily. *** MEUNIERE SAUCE ***

Combine all ingredients and simmer 5 minutes. NOTE: This recipe can be tripled or quadrupled for a large gathering; use a large baking sheet.
