|2 tablespoons||Bacon fat or butter; melted|
|3 slices||Bacon; cooked, finely chopped|
|4 tablespoons||Peanut butter; approx.|
Yield: 12 muffins
Mix thoroughly flour, baking powder, sugar, and salt. In a medium-size bowl beat the egg; add milk, melted fat, and chopped bacon. Stir in the flour mixture, but do not beat; mixture should be just moistened. Pour a little batter into each well-greased muffin tin, then drop in about ⅓ teaspoon of peanut butter before filling tins ¾ full. Bake in a preheated 400 F oven for 20 to 25 minutes.
